For the Lenten soup, in a small pot, cook the cleaned and chopped green beans. In a large pot, sauté the cleaned and diced carrots and beetroot in oil and pour in soup.

Simmer, cut the leeks into rings and add them, dice the potatoes and cook them as well. Blanch the tomatoes, peel, seed and chop and add, lastly the sliced zucchini.

Now add either fresh or dried herbs, when the green beans are cooked, drain and also add to the soup. Add salt and pepper if necessary.

Preparation Tip:

This Lenten soup is alkaline.
