For the vanilla cream tarts with berries, first make half the amount of sponge cake according to the basic recipe, but color 1/4 with green food coloring. Cut out the white sponge round, scrape off the green sponge.

Color granulated sugar (amount as desired) with red food coloring and spread in large circles on plates, place sponge circles on top.

For the vanilla cream, make a custard according to package directions, but whip additional whipped cream and fold it in. Pipe the cream onto the completely cooled sponge cake circles.

Wash the berries, pat dry and place on top of the cream. Finally, decoratively spread the scraped green sponge on top.
