This cake is dedicated to St. Constantine, the patron saint of Perugia. Thus, on January 29, many families of Perugia make themselves to prepare a torcolo. Traditionally, a glass of Vinsanto is drunk with it. The cake tastes especially good if you dip it briefly in Vinsanto before eating it.

Melt the yeast in lukewarm water. Pile more on a surface, make a bulge in the middle and pour in the dissolved anise, yeast, sugar, pine nuts, candied lemon and orange peel, lard, oil and salt. Knead all the ingredients together with the flour to form a uniform, rather firm dough.

Shape the dough into a wreath, place it in a well-greased cake pan and let it rise for about an hour. Bake in the oven at 220 °C for 30 to 45 min.

Bring to the table cold.
