For the sweet potato ginger soup, first peel and finely grate the ginger. Roughly chop the lemongrass. Peel and finely chop the onions. Peel and dice the sweet potatoes.

Meanwhile, sauté onion and grated ginger in a little oil. Add the sweet potato cubes. Pour in soup, add lemongrass and simmer for about 20-25 minutes.

Remove the lemongrass again. Puree and pass through a sieve if needed. Season to taste with salt and pepper.

Heat the coconut milk and froth with a milk frother. Wash the young onion and cut into fine rings.
