Heat oven to 200 °C .

Score the chestnuts crosswise at the pointed end and roast them on the tray in the oven until the shells burst. This takes about 20 minutes.

Melt the butter in a saucepan, add the chestnuts and stir-fry until light yellow. Add a quarter of the beef broth and simmer at low heat for 30 minutes.

Grind the chestnuts in a hand mixer. Return the pulp to the saucepan, add the rest of the beef broth and let it all boil up while stirring.

Mix the egg yolks and whipped cream. Remove the soup from the stove, add 3-4 tablespoons of the soup to the egg yolk-whipped cream mixture and stir it into the soup. Season the soup with salt and a pinch of nutmeg.
