In a large baking bowl, crumble the yeast into small crumbs, add a little milk and sugar. Mix it all together to form a dampfl, then cover the baking bowl with a thin towel and let the dampfl rise in a not too hot, but warm place.

When the dampfl has increased accordingly after about 20 minutes, add the remaining ingredients and knead the ingredients into a smooth, firm dough, which is again left to rise for about 20 minutes (under flat conditions mentioned).

For the steamed noodles, form small balls of yeast from the dough, the size of medium-sized tangerines, and place them on a floured baking board. In the meantime, in a frying pan as large as possible, heat enough clarified butter (light butter or possibly butter is also good) to cover the bottom. Add equal parts of water or milk to the fat (best when the frying pan is not too hot). Add sugar (for a caramel crust – very tasty!) or salt (the salty version is great with potato soup) and place a few yeast balls in the hot frying pan. They must be placed far enough apart from each other, otherwise the result will be an ugly lump of yeast in the frying pan.
