The dough of the spelt holiday bread prepared in the Thermomix TM31:

Stir warm milk, yeast, oil and rice syrup for 2 minutes at 37 degrees. Then add the flour and mineral water and knead the dough for about 3.5 minutes.

Transfer to a bowl, dust with flour and let rise for about 30 minutes. Then transfer the dough to a floured work surface and form 5 equal-sized balls. Let these rest for another 10 minutes. Then roll out the individual balls, always brush each with margarine and stack one on top of the other.

Do not brush the last dough with margarine. Now roll out the stack thinly, cut out a 2-3 cm border and cut into 4 even pieces and set aside.

Cut the rolled out large dough into 16 pieces (corners like a pizza). Now roll these corners slightly diagonally and arrange them next to each other in a round, oiled baking dish (diameter approx. 26 cm) – the thicker end goes to the edge of the baking dish.

Roll the 4 remaining pieces of dough from the edge into florets and place in the center of the baking dish. Let the bread rest and rise again (about 15 minutes) and then brush with the beaten egg yolk and sprinkle with sesame seeds.

Bake the spelt festive bread in the oven at 200 degrees for 30 minutes, then turn down the temperature to 180 degrees and bake for another 15 minutes.

Preparation Tip:

When the spelt festive bread already gets a slightly golden color, put aluminum foil over it and finish baking. This way it will not get too dark.
