For the semolina flummery, first cut open the vanilla pods and scrape out the pulp.

Mix soy drink with apple syrup, cinnamon, vanilla pulp and vanilla pods and bring to a boil. Stir in semolina and lemon zest.

Cook a semolina porridge in about 5 minutes while stirring. Remove cinnamon and vanilla beans, let semolina porridge cool.

Using a hand mixer, blend semolina porridge and soy yogurt until smooth and serve the semolina flummery.

Preparation Tip:

The semolina flummery harmonizes for example with raspberry sauce, orange sauce, apple compote or simply with sour cherries from the jar.
