Wash quinces, quarter and cut out the core, cut into wedges with the peel if desired and then into small pieces. Caramelize sugar in hot, dry pan, deglaze with red wine (DO NOT STIR, otherwise the caramelized sugar will become quite hard!), boil down briefly. Flavor with cinnamon and add the quinces. As soon as the quinces become soft, mix some red wine with cornstarch and thicken the red wine quinces with it. (If the red wine has already boiled down and the quinces are not yet soft, add more wine as needed).
