Instructions:

For the plum pizza, first prepare the pizza dough. To do this, mix the yeast with a few tablespoons of lukewarm water and whole cane sugar until smooth, sprinkle with a little flour and leave in a warm place until cracks have formed (about 10 minutes).

Mix flour with mountain kernel salt in a large bowl, press a well in the center and pour in the pre-dough, olive oil and remaining water.

Stir with a mixer until the ingredients are combined.

On a floured work surface, knead the mixture into an elastic dough, form a ball and let it rise, covered, in a warm place for about 1 hour, until the dough has doubled in volume.

For the bela, heat red wine with balsamic vinegar.

Cut the onion into wedges and saute with the skinned whole garlic cloves and the cinnamon stick.

Reduce until there is almost no liquid left.

Steam green beans in salted water until tender.

Remove seeds from plums and cut in half.

For the paste, mix tomato paste with yeast paste, harissa and balsamic vinegar until smooth and spread thinly on the dough.

Top with plum halves, mushrooms, green beans, braised onion pieces and halved garlic cloves, pepper and salt if desired.

Cut mozzarella into pieces and spread over the top.

Bake the plum pizza in the preheated oven at 200 °C for about 30 minutes (until the cheese is golden brown).

For decoration, place basil leaves on the plum pizza.
