Instructions:

First, mix the milk, eggs and salt. Let the sifted spelt flour trickle in and stir in nicely. Leave to stand briefly so that everything combines and allow to swell.

Before baking, add a dash of mineral water.

Melt some clarified butter in a pancake pan, pour in enough batter to cover the bottom thinly (spread evenly by swirling).

Bake first one side, then the other over moderate heat until light brown. Layer on a preheated plate and cover with a second plate until all the batter has been used.

Serve while still warm or turn into frittatas.

Preparation Tip:

Mineral water makes the mixture for the pancakes nice and fluffy.
