For the okra curry recipe, start by bringing a pot of water to a boil.

In the meantime, wash the okra, remove the stems and tops and cut into medium sized pieces. Salt the water and boil the vegetables in it for about 5 minutes.

Meanwhile, peel and finely dice the onion. Wash the chili peppers, remove the seeds and chop into small pieces. Also peel and finely chop the garlic and ginger. Drain the okra and rinse with cold water.

Now heat oil in a pot and sauté onion until translucent. Then add garlic, ginger and turmeric and saute for 1 minute. Add the okra vegetables and sauté on low heat for about 5 minutes until soft. Then add coriander and cumin and pour coconut milk. Let the whole thing steam in the open saucepan for another 5 minutes.

Finally, season the okra curry with salt and pepper and enjoy.
