Instructions:

For the Marinated Olives with Fennel, wash and clean the fennel and cut into small cubes.

Finely chop the fennel greens.

Peel and finely chop the garlic.

Wash the olives in hot water and drain well.

Heat 3 tablespoons of the olive oil in a pot and sauté the garlic. Add the fennel cubes and sauté them as well. Finally, add the olives and fry briefly.

Deglaze with vinegar and season with pepper.

Put the bay leaves and the chopped fennel greens in a bowl, pour the vegetable-olive mixture over it and pour the remaining olive oil over it.

Cover, refrigerate and let marinate for a day.
