Instructions:

* Prepare the sour for the soup in advance: Pour the flour or bran into an earthenware pot and pour water over it. Cover the jar with gauze and keep in a warm place (about 25 grdC) for a few days. Possibly help with a little sourdough from the baker.

* Pour cold water over the sausage and the diced or sliced potatoes, add pepper and bay leaf spices and cook over a high heat. When the potatoes are soft, add the sour water, stirring thoroughly. Bring the soup to a boil and remove from heat. Fry the diced bacon with the chopped onion and add it to the soup. Season with salt, pepper and enough crushed garlic. Take out the sausage, cut it into slices and add it repeatedly to the soup. Bring the sour soup to the table very hot.
