The recipe is based on a cake prepared – and sold there in the same way – as a monastery cake in the Karthause Ittingen. Because it is a gift from heaven, the calorie absolution is already included…

Beat the egg yolks, butter and sugar with a whisk until the mixture becomes whitish. Add lemon zest and cinnamon.

Mix chocolate, hazelnuts and breadcrumbs. Beat egg whites with salt until stiff. Layer on top of buttercream mold, mixing thoroughly (but no longer than necessary, and not too vigorously).

Fill the buttered and floured form, bake on the lowest shelf in the oven heated to 160 °C for 50 to 60 minutes.
