Following a traditional grilling method, cut the vegetables to fit, place them in a bamboo tube, cover them with coconut cream, seal the tube with banana leaves, and grill or possibly roast them in the embers for at least 30 min. until they have absorbed most of the coconut cream. This way, green water mimosa, beans, papaya, banana flowers and melanzane retain a wonderful resinous good taste. Bamboo sticks can be purchased at nurseries or possibly Asian stores.
