For grilled anchovies, first clean the anchovies, remove the gills and cut off the heads.

Cut along the side of the backbone and dry well with a paper towel. Salt the anchovies with coarse salt on the outside only.

Heat the grill well and oil it a little with olive oil. Fry the anchovies on both sides for 3 to 5 minutes. Turn the fish only once. In between, brush with the sprig of rosemary dipped in olive oil.

Grill the anchovies until the skin is golden brown and crispy.
