For the game-style chicken fillet, dice the onion. Clean the soup vegetables and cut them into not too small pieces. Salt and pepper the chicken fillets and attach a slice of bacon to each with 2 toothpicks.

Sear on both sides in a pan with hot oil. Take out again and roast the onion cubes in the pan. If necessary, add a little more oil.

Sauté the soup vegetables and bacon cubes as well. Now deglaze with game stock. Add crushed juniper berries, bay leaf and cranberry compote and put the meat back in.

It should be completely covered. If necessary, pour in some more stock. Cover and simmer for about 20 minutes. Now lift out the meat again, add whipped cream to the pan and coarsely puree everything with a blender, bring to the boil once.
