For the semolina casserole with apricots, cook a thick porridge with milk and semolina and let cool. Beat the egg whites until stiff. Cream butter, sugar , yolks and the spices.

Stir the cooled semolina porridge by the spoonful into the butter mixture. Fold in the chopped apricots and carefully fold the beaten egg whites into the mixture.
