For the fake fir honey, place the fir tips in a large, deep baking bowl and cover them sufficiently with cold water. As the tops rise, you need to place a plate over them. Leave to infuse for one night.

A day later, bring the fir tips to a leisurely boil along with the water and cook until the tips are almost devoid of color. Line a large sieve with a muslin cloth or several milk filters, pour in the fir broth with the tips in several portions and let it drain off leisurely. Squeeze the tips well. This process takes quite a bit of time.

Weigh the drained liquid and mix it with the same mass of jelling sugar. Bring to a boil and cook bubbling for a few minutes. Remove the saucepan from the stove and make a jelly test. To do this, place a glass plate in the freezer for a short time, then put a little fir honey on the plate and repeatedly place in the freezer for a few minutes. If the amount is not firm enough, boil for 1 more minute, then repeat the test. If necessary, let it bubble up again.

At this mixing ratio, the false fir honey will not become as solid as a fruit jelly, but will remain liquid like clear bee honey. Pour into small screw-top jars and keep in the refrigerator if possible.
