For the curd cheese soufflé, first preheat the oven to 190 °C. Cream butter, sugar and egg yolks.

Stir in semolina and curd cheese, gradually fold in the juice of one lemon. Beat the 4 egg whites until stiff and carefully fold into the mixture.

Pour the curd mixture into a prepared gratin dish and bake the curd casserole for 30 to 45 minutes.

Preparation Tip:

Compote or roaster goes well with the curd cheese soufflé.
