For the carrot-ginger soup, dice onion and carrots, fry onion in butter, add carrots and peeled ginger.

Add water, salt, ground pepper, coriander and some turmeric and simmer until carrots are soft.

Puree soup if necessary slightly extend with water and season.

Preparation Tip:

A few squirts of lemon juice refreshes the carrot-ginger soup. To help absorb the vitamins, add a splash of oil to the soup.
