Divide broccoli into roses, cut stems into narrow strips and cook al dente in boiling vegetable soup. Reserve vegetable soup for the sauce.

Finely grate potatoes, mix with half of the fat, egg yolks and spices. Whip egg whites until stiff and fold in. Add drained broccoli roses, mix and pour into a greased loaf pan. Bake in heated oven at 180 °C for about 40 min. Fry onion and garlic in remaining fat, add flour. Pour about 200 ml of vegetable soup, add whipped cream, season with sea salt, pepper and juice of one lemon, cook for a few min.

Fold in saffron and broccoli strips. Cut the cake into slices and pour the sauce over them.

Serve with breaded fried tofu.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
