For the baked chicken liver with egg, first cut the chives into fine rolls. Whisk the eggs. Mix all the ingredients for the eggs, pour into 4 greased ovenproof ramekins and place in the oven at 170 °C until the eggs have set.

In the meantime, wash and trim the liver. First roll in flour, then in beaten egg and finally in breadcrumbs.

Heat some oil in a frying pan. Fry the livers on all sides until crispy.

Arrange baked chicken liver with egg and serve.
