For the avocado pasta salad, cook the pasta in salted water according to package directions. Strain, rinse and drain with oil. Marinate with white wine vinegar, salt and pepper.

Hard boil eggs, rinse, cool and chop.

Cut avocados in half, remove pit, scoop out flesh with a potato corer, sprinkle scoops with juice of one lemon and stir into pasta.

Wash and slice the tomatoes and stir them into the pasta salad. Add eggs and season the avocado pasta salad with salt and pepper.
