For the apple fat, fill a frying clean with about 1cm of water. Cut the pork fat into small cubes and add to the pan. Melt (render) over moderate heat until the fat cubes are golden. Then remove from heat.

Mix in the apple cubes, season with garlic and salt. Add bay leaf and ground pepper and let the apple fat get cold.

Preparation Tip:

The pork fat is easier and nicer to cut into cubes if it is well chilled in the freezer for a short time beforehand.
