For the almond cake, beat egg yolks with salt and sugar until foamy.

Add cinnamon, vanilla sugar, lemon zest, almonds and baking powder. Beat egg whites with a little lemon juice until stiff and fold in.

Pour into a 26 cm baking pan and bake the almond cake in the preheated oven at 175 degrees for 55 minutes.

Preparation Tip:

Mix the baking powder with almonds when preparing the almond cake, never add directly to liquid. Instead of almonds, you can also use hazelnuts, so that it becomes a hazelnut cake.
