Instructions:

1. cut bacon into strips 3 cm wide. Quarter apple, core, cut diagonally into wedges and mix with the juice of one lemon. Melt 2 tbsp butter. Mix egg yolks, a little nutmeg, pepper, salt, baking powder, flour, milk and melted butter.

2. whip egg whites until stiff. Fold into flour mixture. Heat oil in a coated frying pan (20 cm ø). Fry bacon and apples in it, remove. Melt remaining butter, pour in batter.

Roast on medium heat for 5-7 min. Cut quantity into quarters, turn to other side, roast another 5 min.

3. shred Schmarren, add apples and bacon another time, fry briefly more. Serve with herb curd cheese.
