Mix the walnuts with the mascarpone, eggs, egg yolks and calvados and place in an ovenproof dish. Then bake in the oven at 200 °C for a good half hour. For the fruit salad, peel and grate the carrots and pears. Then mix them with the sugar and the cherry brandy. Cut the cheese terrine and bring to the table with the leaf salad.
