For the buttermilk sauce, soak the gelatin in cold water for about 10 minutes. In the meantime, puree the strawberries with a blender.
Stir the strawberry puree through with the buttermilk and the frutilose. Squeeze the gelatin and let it melt in a saucepan over mild heat, add it to the buttermilk mixture and stir it in well.
Pour the dessert into glasses and refrigerate until firm. Garnish with fresh strawberries.
