Remove the skin from the apples. Cut just under half of the fruit into quarters, cut out the core and cut the apples into small pieces. Fish out the core from the remaining apples with an apple corer and cut the fruit into rings.

Butter a gratin dish very generously. Spread the bottom and sides of the pan with the apple rings. Mix the vanilla sugar, curd, sugar, eggs, sour cream and cream together. At the end add the almond kernels or hazelnuts. Pour the mixture into the mold and smooth it out. Top with the apple slices in the shape of a wreath. Sprinkle with cinnamon sugar and cover with butter flakes.

Meanwhile, bake the apple casserole in the oven heated to 200° Celsius on the lowest rack for forty-five to fifty minutes. If the casserole starts to brown too quickly, cover with aluminum foil. Put on the table hot or alternatively lukewarm.
