For the steamed dumplings with chicken, ginger and sweet and spicy chili sauce, finely chop the chicken or put it through a meat grinder.
Wash the parsley and chop very finely. Peel and finely chop the ginger and garlic. Wash the bean sprouts and chop them a little. Mix all ingredients and season with turmeric, soy sauce and sesame oil.
Beat the egg. Let Wantan dough sheets thaw slightly and place 1 spoonful of chicken filling on each. Brush the edges with the egg – this acts as a glue. Twist or fold into dumplings.
Coat a perforated container with oil and steam the chicken dumplings at 100° C for 10 minutes.
For the sauce, caramelize brown sugar and deglaze with soy sauce. Let it reduce a little. Finely chop the spring onion and chili and stir into the sauce.
Serve steamed wantans with the sweet and spicy chili sauce as an appetizer.
