For a snow hood or egg white hood, the basic rule is 50 g of sugar per egg white. The amount for a cake or pie depends on how high you want the snow cover to be.
Baking time: approx. 10 minutes at 180 °C, then turn on the grill for approx. 2 minutes to get a nice discoloration. This can also be done with a scorcher.
If you want the snow topping to be more like a meringue, use more sugar – 70 g per egg white – and bake longer at a lower temperature.
Bake at 160 °C for about 20 minutes, leaving the oven slightly open.
