1) Sort out the spelt with the water in a saucepan and soak with the lid closed for 2-3 hours. On top of it, bring the grains with 1 pinch of salt to a light boil for 5 min, then swell with the lid closed at low temperature in 20-half hour.
2) In the meantime, clean, rinse and cut or chop the spinach into strips,
3) Chop the onion and garlic separately. Heat the butter in a saucepan and lightly sauté the onion.
4) Add the garlic and the spinach. Pour the cream or the milk and cook the spinach for about 5 minutes at medium heat with the lid closed.
5) Add the spelt. Season with salt, nutmeg and cheese.
Stir in the parsley.
