Place the hazelnuts on an ungreased baking tray and place in the preheated oven on the middle shelf.

Take out. Form on a dry kitchen towel. Grate against each other so that the skin comes off. Cool the nuts. Put them through an almond grinder.
Bring butter, milk, salt and sugar to a boil in a wide saucepan. Add flour all at once. Stir until a smooth dumpling forms and separates from bottom of saucepan. Remove saucepan from heat. Cool quantity a little. Add beaten egg yolks and hazelnuts. Beat egg whites until stiff. Fold in. Grease a fireproof dish. Pour in the dough. Place in the heated oven on the middle shelf. Baking time: 60 min.

Gas stove: level 3
Take out and bring to the table hot on the spot.
Serve: Lightly whipped wine sauce or whipped cream.
