For the Florentines, finely chop candied orange peel. Briefly boil whipping cream with butter, honey and salt, add remaining ingredients, boil once. Spread with 2 small spoons into paper cups and bake at 170 °C.
Remove from paper cups after one day. Heat the chocolate glaze and glaze the underside of the Florentines with it.
