For the chestnut cream, mix the chestnut flour with a little cold milk until smooth. Bring the remaining milk to a boil, stir in the mixed chestnut flour, maple syrup and cinnamon.
Bring to a boil and simmer over low heat until the cream thickens. Allow to cool and whip with a mixer or whisk until fluffy.
Fold in the whipped cream and fill the chestnut cream into small bowls and chill.
