For the field hare, cut the hare into pieces and cook in a pot with the vegetables, spices and a little vinegar until soft.
When the hare pieces are soft, remove them from the pot and keep warm.
For the sauce, fry the onion in a pan, finely mix the vegetables and add them. You can also prepare a light roux to make the sauce more plump.
Serve the hare hot with the sauce.
