For the vegetable casserole, cut the zucchini into 1 cm thick slices. Thinly slice the onions and peel the tomatoes and slice them as well (not too thin).

Chop the parsley and crush the garlic.

Oil a baking dish and layer the vegetables alternately in the dish. Sprinkle the herbs in between and season with salt and pepper. Pour a little oil on top and sprinkle with breadcrumbs and cheese.

Cover and cook in the preheated oven at 180 degrees for about 30 minutes.

Remove the vegetable casserole from the oven and serve hot.
